Fresh paw paw salad

This is a health promoting salad that tastes fantastic! The beautiful thing about this recipe is that it is loaded with digestive enzymes, cardiovascular protecting herbs and digestive and lymphatic cleansing herbs. The recipe can be adapted to suit your local ingredients, however the dressing needs to be kept as written for medicinal benefits.

Salad:
1 green paw paw fruit grated
1/2 red paw paw fruit and seed
Fresh green herbs as available which can include rocket, baby spinach , parsley, coriander, fennel, celery green. This salad works with most vegetables so use any fresh vegetables that you love. Vegetables chosen also depend on season and locality.

Dressing:
1 onion diced finely
5 cloves garlic peeled and diced finely
Juice of three lemons
1 pinch good Himalayan or sea salt
1/3 cup sweet chili sauce
2 tablespoon sesame oil

Method

  1. Wash, chop and place all  fruit and vegetable ingredients on a platter.
  2. Mix together all ingredients for salad dressing and pour over vegetables, toss and serve.
  3. You may wish to add extra chili diced to dressing if everyone likes hot food.
  4. You can also add any fresh herbs as available.
